  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1 can (14 ounces) diced tomatoes
  • 4 cups vegetable broth
  • 1 cup peanut butter
  • 1 can (15 ounces) chickpeas drained and rinsed
  • 2 cups sweet potatoes diced
  • 1 teaspoon cayenne pepper (optional)
  • 1 cup spinach
  • Salt to taste

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add onions and sauté until translucent.
  3. Stir in garlic and ginger and cook for an additional minute.
  4. Add diced tomatoes and broth, then bring to a boil.
  5. Stir in peanut butter until fully melted.
  6. Add chickpeas, sweet potatoes, and cayenne pepper. Simmer until sweet potatoes are tender.
  7. Mix in spinach and season with salt. Cook for a few more minutes until spinach wilts.
  8. Serve hot with rice or bread.

Notes

  • For extra flavor, add a splash of lime juice before serving.
  • This stew can be made ahead of time and tastes even better the next day.
