- 4 strips turkey bacon
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) chickpeas, drained
- 1 cup peanut butter
- 4 cups vegetable broth
- 1 cup sweet potatoes, cubed
- 1 cup spinach, chopped
- 1 teaspoon cayenne pepper
- 1 teaspoon cumin
- 1 tablespoon olive oil
- In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and set aside.
- In the same pot, add onion, garlic, and ginger. Sauté until fragrant.
- Add diced tomatoes, chickpeas, peanut butter, and vegetable broth. Stir well.
- Mix in sweet potatoes, cayenne pepper, and cumin. Bring to a simmer.
- Cook for 20 minutes or until sweet potatoes are tender.
- Stir in spinach and cook for an additional 5 minutes.
- Serve hot, garnished with crumbled turkey bacon.
