A flavorful and hearty African Peanut Stew featuring turkey bacon for a delicious twist.

  • 4 strips turkey bacon
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) chickpeas, drained
  • 1 cup peanut butter
  • 4 cups vegetable broth
  • 1 cup sweet potatoes, cubed
  • 1 cup spinach, chopped
  • 1 teaspoon cayenne pepper
  • 1 teaspoon cumin
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and set aside.
  2. In the same pot, add onion, garlic, and ginger. Sauté until fragrant.
  3. Add diced tomatoes, chickpeas, peanut butter, and vegetable broth. Stir well.
  4. Mix in sweet potatoes, cayenne pepper, and cumin. Bring to a simmer.
  5. Cook for 20 minutes or until sweet potatoes are tender.
  6. Stir in spinach and cook for an additional 5 minutes.
  7. Serve hot, garnished with crumbled turkey bacon.

Notes

  • For a spicier dish, increase the amount of cayenne pepper.
