- 2 cloves garlic minced
- 1 inch ginger grated
- 1 can diced tomatoes
- 1 cup peanut butter
- 4 cups vegetable broth
- 2 cups sweet potatoes diced
- 1 can chickpeas drained
- 2 cups spinach
- 2 tablespoons olive oil
- 1 teaspoon cayenne pepper
- 1 teaspoon cumin
- Salt and pepper to taste
- Heat olive oil in a large pot over medium heat. Add onion, garlic, and ginger; sauté until soft.
- Add diced sweet potatoes and cook for a few minutes.
- Stir in the diced tomatoes, peanut butter, vegetable broth, cayenne, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer until sweet potatoes are tender.
- Stir in chickpeas and spinach, cooking until spinach wilts.
