  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 1 can diced tomatoes
  • 1 cup peanut butter
  • 4 cups vegetable broth
  • 2 cups sweet potatoes diced
  • 1 can chickpeas drained
  • 2 cups spinach
  • 2 tablespoons olive oil
  • 1 teaspoon cayenne pepper
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, and ginger; sauté until soft.
  2. Add diced sweet potatoes and cook for a few minutes.
  3. Stir in the diced tomatoes, peanut butter, vegetable broth, cayenne, cumin, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer until sweet potatoes are tender.
  5. Stir in chickpeas and spinach, cooking until spinach wilts.
  6. Serve hot, garnished with additional peanuts if desired.

Notes

  • Adjust the spice level to your preference by reducing or increasing cayenne pepper.
  • This stew can be made ahead and tastes even better the next day!
