  • 2 pounds chicken, cut into pieces
  • 2 tablespoons curry powder
  • 1 teaspoon thyme
  • 1 teaspoon allspice
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 Scotch bonnet pepper, chopped
  • 2 carrots, sliced
  • 1 bell pepper, chopped
  • 2 cups chicken broth
  • 2 tablespoons vegetable oil
  • Salt to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion, garlic, and Scotch bonnet pepper; sauté until fragrant.
  3. Stir in the curry powder, thyme, and allspice until well combined.
  4. Add the chicken pieces to the pot, browning them on all sides.
  5. Pour in the chicken broth and bring to a boil.
  6. Reduce heat and add the carrots and bell pepper.
  7. Cover and simmer for about 30 minutes, until the chicken is cooked through.
