2 pounds chicken, cut into pieces
2 tablespoons Jamaican curry powder
1 tablespoon salt
1 teaspoon black pepper
1 tablespoon garlic, minced
1 tablespoon ginger, grated
1 onion, chopped
1 bell pepper, chopped
2 scallions, chopped
1 Scotch bonnet pepper, whole
4 cups chicken broth
2 tablespoons vegetable oil
1 cup coconut milk
Instructions
In a large bowl, mix the chicken with curry powder, salt, black pepper, garlic, and ginger. Marinate for at least 1 hour or overnight for best flavor.
In a large pot, heat the vegetable oil over medium heat. Add the onion, bell pepper, and scallions. Sauté until softened.
Add the marinated chicken to the pot and brown on all sides.
Pour in the chicken broth and add the whole Scotch bonnet pepper. Bring to a simmer.
Cover and cook for about 30 minutes or until the chicken is tender.
Stir in the coconut milk and cook for an additional 10 minutes.
Notes
Adjust the spice level by adding more or less Scotch bonnet pepper.
