  • 2 pounds chicken, cut into pieces
  • 2 tablespoons curry powder
  • 1 teaspoon allspice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 green onions, sliced
  • 2 Scotch bonnet peppers, chopped (optional)
  • 1 can (14 oz) coconut milk
  • 2 tablespoons vegetable oil
  • 2 cups water

Instructions

  1. In a large bowl, mix the chicken pieces with curry powder, allspice, salt, and black pepper. Let marinate for at least 30 minutes.
  2. In a large pot, heat vegetable oil over medium heat. Add the onions, garlic, and ginger, and sauté until the onions are translucent.
  3. Add the marinated chicken and cook until browned on all sides.
  4. Stir in the coconut milk and water, then add the green onions and Scotch bonnet peppers.
  5. Bring to a boil, then reduce heat and let simmer for 30-40 minutes until the chicken is cooked through and tender.
  6. Serve hot with rice or dumplings.
