- 2 pounds chicken, cut into pieces
- 2 tablespoons curry powder
- 1 teaspoon allspice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 green onions, sliced
- 2 Scotch bonnet peppers, chopped (optional)
- 1 can (14 oz) coconut milk
- 2 tablespoons vegetable oil
- 2 cups water
- In a large bowl, mix the chicken pieces with curry powder, allspice, salt, and black pepper. Let marinate for at least 30 minutes.
- In a large pot, heat vegetable oil over medium heat. Add the onions, garlic, and ginger, and sauté until the onions are translucent.
- Add the marinated chicken and cook until browned on all sides.
- Stir in the coconut milk and water, then add the green onions and Scotch bonnet peppers.
