- 1 pound pasta
- 2 cups butternut squash, cubed
- 1 cup ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
- 2 cups spinach, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 2 tablespoons olive oil
- salt to taste

- Preheat oven to 375°F (190°C).
- In a large pot, cook pasta according to package instructions. Drain and set aside.
- In a skillet, heat olive oil and sauté garlic until fragrant.
- Add butternut squash and spinach, cooking until tender.
- In a large bowl, combine cooked pasta, sautéed vegetables, ricotta cheese, Italian seasoning, salt, and pepper.
- Layer half of the mixture in a baking dish, top with mozzarella, then add the remaining mixture.
- Finish with parmesan cheese on top.
- Bake for 25-30 minutes until golden and bubbly.
