Indulge in a warm and comforting baked pasta dish featuring delicious butternut squash.

  • 1 pound pasta
  • 2 cups butternut squash, cubed
  • 1 cup ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 2 cups spinach, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large pot, cook pasta according to package instructions. Drain and set aside.
  3. In a skillet, heat olive oil and sauté garlic until fragrant.
  4. Add butternut squash and spinach, cooking until tender.
  5. In a large bowl, combine cooked pasta, sautéed vegetables, ricotta cheese, Italian seasoning, salt, and pepper.
  6. Layer half of the mixture in a baking dish, top with mozzarella, then add the remaining mixture.
  7. Finish with parmesan cheese on top.
  8. Bake for 25-30 minutes until golden and bubbly.

Notes

  • For added flavor, consider adding nutmeg to the cheese mixture.
  • Serve with a side salad for a complete meal.
