- 4 large russet potatoes
- 4 slices turkey bacon
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 4 cups chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1/2 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 2 tablespoons butter
- Preheat oven to 400°F (200°C).
- Wash and poke holes in the potatoes; bake for 1 hour.
- Meanwhile, cook turkey bacon in a skillet until crispy. Remove and crumble.
- In the same skillet, melt butter and sauté onion and garlic until soft.
- Remove baked potatoes from the oven, scoop out the insides, and add to a pot with chicken broth.
- Add sautéed onion and garlic, salt, pepper, and paprika; blend until smooth.
- Stir in sour cream and heavy cream, then stir in cheddar cheese.
- Top with crumbled bacon before serving.
