A delicious and comforting baked dish featuring zucchini, spinach, and turkey bacon.

Ingredients

  • 2 medium zucchinis
  • 4 cups fresh spinach
  • 4 slices turkey bacon
  • 1 cup shredded mozzarella cheese
  • 3 cloves garlic, minced
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis and chop the spinach.
  3. In a skillet, cook the turkey bacon until crispy, then remove and crumble.
  4. Add olive oil and garlic to the skillet, sauté for 1 minute.
  5. Stir in the spinach until wilted.
  6. In a baking dish, layer the zucchini, spinach mixture, and crumbled bacon. Top with mozzarella.
  7. Bake for 25-30 minutes until cheese is melted and bubbly.
