3 pounds beef chuck roast
1 onion, quartered
4 garlic cloves
2 dried guajillo chilies
1 bay leaf
1 teaspoon cumin
1 teaspoon oregano
4 cups beef broth
1 tablespoon salt
Instructions
In a large pot, sear the beef on all sides until browned.
Add the onion, garlic, chilies, and spices to the pot.
Pour in the beef broth and bring to a boil.
Reduce heat and simmer for 2-3 hours until the meat is tender.
Remove the meat, shred it, and return it to the pot.
