  • ½ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 4 (8 oz.) packages cream cheese, softened
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, combine crushed graham crackers, sugar, and melted butter. Press this mixture into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat the cream cheese until smooth. Gradually add sour cream and sugar, mixing until well combined.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gently fold in the blueberries.
  6. Pour the cheesecake mixture over the crust in the springform pan.
  7. Bake for 55-60 minutes or until the center is set but slightly jiggly.
  8. Turn off the oven and leave the cheesecake in the oven for 1 hour.
  9. Remove from the oven and let cool completely before refrigerating for at least 4 hours or overnight.
