A delicious and simple recipe for breakfast enchiladas filled with flavorful turkey bacon.

  • 6 large eggs
  • 1 cup shredded turkey bacon
  • 1 cup shredded cheese
  • 1 cup diced bell peppers
  • 1/2 cup chopped onion
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 8 tortillas

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Add onions and peppers, sauté until softened.
  3. In a bowl, whisk together the eggs, garlic powder, and cheese.
  4. Add the turkey bacon, cooked onions, and peppers to the egg mixture.
  5. Fill each tortilla with the egg mixture and roll tightly. Place in a baking dish.
  6. Bake for 20-25 minutes until heated through and slightly golden.
