  • 2 pounds beef stew meat
  • 4 strips turkey bacon
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 can diced tomatoes
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 2 bay leaves
  • 3 large potatoes, cubed

Instructions

  1. In a large pot, cook turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add beef stew meat and brown on all sides.
  3. Add chopped onions and garlic, sauté until translucent.
  4. Stir in beef broth, diced tomatoes, and seasonings.
  5. Bring to a boil, then reduce heat, cover, and simmer for 1.5 hours.
  6. Add potatoes and continue to cook until tender, about 20 minutes.
  7. Finish by stirring in the crispy turkey bacon before serving.

Notes

  • For extra flavor, let the stew rest overnight in the refrigerator before serving.
