1 cup mashed bananas
1/2 cup honey
1/3 cup vegetable oil
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda

1 teaspoon ground cinnamon
Instructions
Preheat your oven to 350°F (175°C) and grease a muffin tin.
In a large bowl, mix the grated carrots, mashed bananas, honey, vegetable oil, eggs, and vanilla extract.
In another bowl, combine the flour, baking soda, baking powder, salt, and cinnamon.
Add the dry ingredients to the wet mixture and stir until just combined.
Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
Bake for 20-25 minutes or until a toothpick comes out clean.
Allow the muffins to cool in the pan for a few minutes before transferring to a wire rack.
