1 medium onion, chopped
2 cloves garlic, minced
4 medium carrots, peeled and sliced
4 cups vegetable broth
1 teaspoon ground cumin
Salt to taste

Instructions
In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
Add the carrots and vegetable broth to the pot. Bring to a boil, then reduce heat and let simmer until the carrots are tender, about 20 minutes.
