A rich and creamy potato soup infused with the flavors of cheddar cheese, garlic, and herbs, topped with crispy turkey bacon.

Ingredients

  • 4 cups diced potatoes
  • 1 cup shredded cheddar cheese
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add garlic and onion, and sauté until translucent.
  2. Add diced potatoes and chicken broth, bringing to a boil. Reduce heat and simmer until potatoes are tender.
  3. Use an immersion blender to puree the soup to desired consistency.
  4. Stir in heavy cream and shredded cheddar cheese until melted and combined.
  5. Cook turkey bacon until crispy, chop into pieces, and add on top of the soup before serving.

Notes

  • For added flavor, top with fresh herbs before serving.
  • This soup can be made ahead of time and reheated.
