Deliciously cheesy and packed with nutritious spinach and mushrooms, these baked quesadillas make for the perfect comfort food.

Ingredients

  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 1 cup shredded cheese
  • 4 large tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté mushrooms until soft.
  3. Add spinach and cook until wilted, then season with garlic powder, onion powder, and salt.
  4. Lay one tortilla flat, add a layer of the mushroom and spinach mixture, and sprinkle with cheese.
  5. Top with another tortilla and repeat with remaining ingredients.
  6. Place quesadillas on a baking sheet and bake for 15-20 minutes until golden.
  7. Cut into wedges and serve.
