Cheesy Baked Spinach & Mushroom Quesadillas are the perfect comfort food, featuring delicious flavors and a very easy preparation process.

Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 cup cheese, shredded
  • 4 flour tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat.
  3. Add mushrooms and sauté until soft.
  4. Add spinach, garlic powder, salt, and pepper; cook until spinach wilts.
  5. On one half of each tortilla, layer cheese and the spinach-mushroom mixture.
  6. Fold tortillas and place on a baking sheet.
  7. Bake for 10-12 minutes until golden and crispy.
  8. Remove from oven, cut into wedges, and serve.

  • Serve with salsa or sour cream for dipping.
