A comforting twist on a classic meatloaf, featuring a cheesy mashed potato topping and the delicious flavor of turkey bacon.

Ingredients

  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 cup breadcrumbs
  • 1 egg
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine ground turkey, chopped turkey bacon, breadcrumbs, egg, milk, salt, and pepper.
  3. Form the mixture into a loaf and place in a baking dish.
  4. Bake for 45 minutes.
  5. While the meatloaf is baking, prepare the mashed potatoes and mix in the cheddar cheese.
  6. After 45 minutes, remove the meatloaf and spread the cheesy mashed potatoes on top.
  7. Return to the oven and bake for an additional 15 minutes.

Notes

  • For a spicier kick, add some chopped jalapeños to the meat mixture.
  • Feel free to use regular bacon if turkey bacon is not available.
