A hearty and comforting dish featuring chicken, chard, and pasta.

Ingredients

  • 1 pound chicken breast, diced
  • 2 cups Swiss chard, chopped
  • 1 cup ditalini pasta
  • 4 cups chicken broth
  • 1 can white beans, drained
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and sauté until softened.
  2. Add the diced chicken and cook until browned.
  3. Stir in the garlic, oregano, salt, and pepper, and cook for another minute.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the pasta and cook according to package instructions.
  6. In the last few minutes of cooking, stir in the chard and beans until heated through.
  7. Serve hot and enjoy!

Notes

  • This dish can be made in advance and tastes even better the next day.
  • Feel free to substitute any leafy greens if chard is unavailable.
