  • 8 ounces rice noodles
  • 2 tablespoons vegetable oil
  • 2 eggs
  • 1 pound chicken breast, sliced
  • 3 cups bean sprouts
  • 3 green onions, chopped
  • 1/4 cup roasted peanuts, crushed
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup soy sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon brown sugar
  • 1 teaspoon red chili flakes

Instructions

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. In a large pan, heat the vegetable oil over medium heat. Add the sliced chicken and cook until no longer pink.
  3. Push the chicken to the side of the pan, crack the eggs into the pan, and scramble them until fully cooked.
  4. Add the cooked noodles, soy sauce, fish sauce, lime juice, and brown sugar to the pan. Toss everything together.
  5. Add the bean sprouts and green onions, and mix well for 2-3 minutes.
  6. Serve hot, garnished with crushed peanuts, cilantro, and red chili flakes.

Notes

  • Feel free to add shrimp or tofu for a different protein option.
  • Adjust the spice level by varying the amount of red chili flakes.
