- 8 ounces rice noodles
- 2 tablespoons vegetable oil
- 2 eggs
- 1 pound chicken breast, sliced
- 3 cups bean sprouts
- 3 green onions, chopped
- 1/4 cup roasted peanuts, crushed
- 1/4 cup fresh cilantro, chopped
- 1/4 cup soy sauce
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 tablespoon brown sugar
- 1 teaspoon red chili flakes
- Cook the rice noodles according to package instructions, then drain and set aside.
- In a large pan, heat the vegetable oil over medium heat. Add the sliced chicken and cook until no longer pink.
- Push the chicken to the side of the pan, crack the eggs into the pan, and scramble them until fully cooked.
- Add the cooked noodles, soy sauce, fish sauce, lime juice, and brown sugar to the pan. Toss everything together.
- Add the bean sprouts and green onions, and mix well for 2-3 minutes.
