Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups potatoes, diced
  • 1 cup turkey bacon, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon thyme

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, sauté the onion and garlic until fragrant.
  3. Add the potatoes and chicken broth to the pot. Bring to a boil and then reduce heat to simmer.
  4. Stir in the shredded chicken, cream, and seasonings. Cook until potatoes are tender.
  5. Serve hot, garnished with turkey bacon.

Notes

  • For a lighter version, you can use low-fat cream.
  • This soup freezes well, just leave out the cream until reheating.
