A delicious and refreshing salad combining chickpeas, feta, and avocado.

Ingredients

  • 1 large avocado, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine chickpeas, feta, avocado, red onion, cherry tomatoes, and parsley.
  2. In a separate small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the salad and gently toss to combine.
