A refreshing chickpea salad loaded with turkey bacon and fresh veggies.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 4 slices turkey bacon, cooked and crumbled
  • 1 bell pepper, diced
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • salt to taste
  • pepper to taste

Instructions

  1. In a large bowl, combine chickpeas, turkey bacon, bell pepper, cucumber, red onion, and parsley.
  2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately or refrigerate for 30 minutes to let flavors meld.
