  • 2 cups jasmine rice
  • 1 pound chicken thighs, boneless and skinless
  • 1 can coconut milk
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups mixed vegetables (e.g., peas and carrots)

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add chicken thighs and cook until golden brown on both sides.
  3. Remove chicken and set aside. In the same skillet, add jasmine rice and sauté for a few minutes.
  4. Pour in coconut milk and chicken broth, stirring to combine.
  5. Add the chicken back into the skillet, along with garlic powder, onion powder, salt, and pepper.
  6. Cover and simmer for about 20 minutes.
  7. Add mixed vegetables in the last 5 minutes of cooking.
  8. Fluff the rice with a fork before serving.
