2 pounds potatoes
4 slices turkey bacon
1 cup diced chicken ham
1 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon apple cider vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup chopped green onions
1/2 cup diced celery
1/4 cup chopped fresh parsley
Instructions
Boil the potatoes in a large pot until tender, about 15-20 minutes. Drain and let cool.
In a skillet, cook the turkey bacon until crispy. Remove from the skillet and chop.
In a large bowl, combine the cooled potatoes, chopped turkey bacon, chicken ham, mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper. Stir until well mixed.
Add the green onions, celery, and parsley. Mix gently to combine.
