- 1 onion, diced
- 3 cloves garlic, minced
- 1 pound cooked chicken, shredded
- 6 cups chicken broth
- 1 can (15 oz) ricotta cheese
- 2 cups lasagna noodles, broken
- 2 cups spinach, chopped
- 1 teaspoon Italian seasoning
- 1 cup mozzarella cheese, shredded
- In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent.
- Add the minced garlic and cook for an additional minute.
- Stir in the shredded chicken and chicken broth. Bring to a simmer.
- Add the ricotta cheese and broken lasagna noodles. Cook until the noodles are tender.
- Stir in chopped spinach and Italian seasoning. Cook until spinach wilts.
- Serve hot, topped with mozzarella cheese.
