A creamy and indulgent chicken lasagna soup that brings comfort to your table.

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 pound cooked chicken, shredded
  • 6 cups chicken broth
  • 1 can (15 oz) ricotta cheese
  • 2 cups lasagna noodles, broken
  • 2 cups spinach, chopped
  • 1 teaspoon Italian seasoning
  • 1 cup mozzarella cheese, shredded

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent.
  2. Add the minced garlic and cook for an additional minute.
  3. Stir in the shredded chicken and chicken broth. Bring to a simmer.
  4. Add the ricotta cheese and broken lasagna noodles. Cook until the noodles are tender.
  5. Stir in chopped spinach and Italian seasoning. Cook until spinach wilts.
  6. Serve hot, topped with mozzarella cheese.

Notes

  • For extra flavor, add grated Parmesan cheese on top before serving.
  • This soup can be made ahead of time and stored in the refrigerator.
