  • 8 ounces lasagna noodles
  • 1 onion diced
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 15 ounces crushed tomatoes
  • 1 teaspoon Italian seasoning
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese shredded
  • 1/2 cup Parmesan cheese grated
  • 2 cups spinach
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  2. Add the chicken breast and cook until no longer pink.
  3. Pour in chicken broth and crushed tomatoes, stir well.
  4. Break lasagna noodles into pieces and add to the pot.
  5. Season with Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Stir in ricotta, mozzarella, and spinach. Cook for an additional 5-10 minutes until cheeses melt.
