A delicious and creamy pasta salad that combines the flavors of Mexican street corn with turkey bacon.

Ingredients

  • 8 ounces elbow macaroni
  • 4 slices turkey bacon
  • 1 cup corn kernels
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 teaspoon lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • 1 avocado
  • 1/4 cup cilantro, chopped
  • 1/2 cup diced tomatoes

Instructions

  1. Cook the elbow macaroni according to package instructions. Drain and set aside.
  2. In a skillet, cook the turkey bacon until crispy. Let it cool and crumble it.
  3. In a large bowl, combine mayonnaise, sour cream, lime juice, chili powder, and cumin.
  4. Add the cooked macaroni, corn, crumbled turkey bacon, avocado, cilantro, and diced tomatoes to the bowl. Mix well.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For extra flavor, add some diced jalapeños.
  • Serve cold for the best taste.
