- 8 ounces elbow macaroni
- 4 slices turkey bacon
- 1 cup corn kernels
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 teaspoon lime juice
- 1/2 teaspoon chili powder
- 1/4 teaspoon cumin
- 1 avocado
- 1/4 cup cilantro, chopped
- 1/2 cup diced tomatoes
- Cook the elbow macaroni according to package instructions. Drain and set aside.
- In a skillet, cook the turkey bacon until crispy. Let it cool and crumble it.
- In a large bowl, combine mayonnaise, sour cream, lime juice, chili powder, and cumin.
- Add the cooked macaroni, corn, crumbled turkey bacon, avocado, cilantro, and diced tomatoes to the bowl. Mix well.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- For extra flavor, add some diced jalapeños.
