A deliciously creamy pasta dish featuring succulent shrimp and flavorful sun-dried tomatoes.

  • 8 ounces fettuccine pasta
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 1/2 cups mozzarella cheese, shredded
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh basil, chopped

Instructions

  1. Cook the fettuccine according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant.
  3. Add shrimp and cook until pink, about 2-3 minutes. Remove shrimp from skillet and set aside.
  4. In the same skillet, add sun-dried tomatoes and cook for 2 minutes.
  5. Add heavy cream, stirring until combined. Bring to a simmer.
  6. Stir in mozzarella cheese, salt, and black pepper, cooking until cheese has melted.
  7. Add cooked shrimp and fettuccine, tossing to combine.
  8. Garnish with fresh basil before serving.

Notes

  • Adjust the amount of garlic according to your taste.
  • For a spicier kick, add red pepper flakes.
