- 8 ounces fettuccine pasta
- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1 1/2 cups mozzarella cheese, shredded
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh basil, chopped
- Cook the fettuccine according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant.
- Add shrimp and cook until pink, about 2-3 minutes. Remove shrimp from skillet and set aside.
- In the same skillet, add sun-dried tomatoes and cook for 2 minutes.
- Add heavy cream, stirring until combined. Bring to a simmer.
- Stir in mozzarella cheese, salt, and black pepper, cooking until cheese has melted.
- Add cooked shrimp and fettuccine, tossing to combine.
- Garnish with fresh basil before serving.
