Creamy Mozzarella Shrimp Pasta with Sun-Dried Tomatoes

A rich and flavorful pasta dish featuring shrimp, mozzarella, and sun-dried tomatoes.

  • 8 ounces pasta
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup mozzarella cheese, shredded
  • 2 cloves garlic, minced
  • Salt to taste
  • Black pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to the package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add shrimp and cook until pink, about 2-3 minutes per side.
  4. Stir in sun-dried tomatoes and heavy cream. Bring to a simmer.
  5. Add mozzarella cheese and stir until melted and smooth.
  6. Toss the cooked pasta into the skillet and mix until well coated.
  7. Season with salt and black pepper to taste.
  8. Serve garnished with fresh basil.

Notes

  • Adjust the creaminess by adding more or less heavy cream as desired.
  • For a spicier kick, consider adding red pepper flakes.
