- 1 pound small potatoes
- 4 slices turkey bacon
- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1/4 teaspoon smoked paprika
- 1/4 cup green onions, chopped
- Salt and pepper to taste
- Preheat the oven to 400°F (200°C).
- Wash the potatoes and place them on a baking sheet. Roast for about 30-35 minutes or until tender.
- While the potatoes are roasting, cook the turkey bacon in a skillet until crispy. Once cooked, crumble and set aside.
- When potatoes are cool enough to handle, cut them in half and scoop out some flesh into a bowl.
- Add mayonnaise, Dijon mustard, smoked paprika, crumbled bacon, and green onions to the bowl. Mix until smooth.
- Stuff the potato halves with the mixture and garnish with additional bacon and green onions, if desired.
- Serve warm.
