- 4 slices turkey bacon
- 1 can black beans, rinsed and drained
- 1 cup corn, frozen or fresh
- 1 red bell pepper, diced
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1 teaspoon taco seasoning
- 1 tablespoon olive oil
- Salt and pepper to taste
- Cook the brown rice according to package instructions.
- In a skillet, cook the turkey bacon until crispy, then chop into pieces.
- In the same skillet, add olive oil, diced red bell pepper, and cook until softened.
- Add black beans, corn, and taco seasoning to the skillet, and stir until heated through.
- In a bowl, layer the cooked rice, vegetable mixture, turkey bacon, cherry tomatoes, and avocado.
- Season with salt and pepper to taste and serve immediately.
