These easy stuffed bell peppers are a flavorful combination of ground beef and rice, perfect for a weeknight dinner.

  • 4 large bell peppers
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 can (15 oz) diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  4. Add the cooked rice, diced tomatoes, garlic powder, onion powder, Italian seasoning, salt, and pepper to the skillet. Mix well.
  5. Stuff the bell peppers with the beef and rice mixture.
  6. Place the stuffed peppers in a baking dish and cover with foil.
  7. Bake in the preheated oven for 30 minutes.
  8. Remove the foil, sprinkle mozzarella cheese on top, and return to the oven for an additional 10 minutes, or until the cheese is melted and bubbly.
  9. Let cool for a few minutes before serving.

Notes

  • For a spicier kick, add crushed red pepper flakes to the beef mixture.
