A simple yet delicious taco rice bowl that brings comfort food to a new level.

Ingredients

  • 1 cup rice
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 2 cups water
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 1 avocado, sliced
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro

Instructions

  1. In a pot, cook the rice according to package instructions.
  2. In a skillet, brown the ground beef over medium heat.
  3. Drain excess fat and add taco seasoning, water, black beans, corn, and diced tomatoes. Stir and simmer for 10 minutes.
  4. Once the rice is cooked, serve it in bowls topped with the beef mixture.
  5. Add cheese, avocado, sour cream, and cilantro on top.
  6. Enjoy your taco rice bowl!
