  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1/2 cup tequila
  • 1/4 cup fresh lime juice
  • 1 tablespoon lime zest
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. Stir in the tequila, lime juice, and lime zest.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually mix the dry ingredients into the wet ingredients until just combined.
  7. Fill the cupcake liners about 2/3 full and bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool completely before frosting.
