4 egg whites
2 slices turkey bacon
1/2 cup bell peppers, chopped
1/4 cup spinach, chopped
1/4 cup onion, diced
1 tablespoon olive oil
salt to taste
pepper to taste
Instructions
In a skillet, cook the turkey bacon until crispy. Remove and chop.
In the same skillet, add olive oil and sauté the onions, bell peppers, and spinach until soft.
Whisk the egg whites in a bowl with salt and pepper.
Pour the egg whites over the sautéed veggies and cook until set, then add the turkey bacon on one half.
Fold the omelet in half and serve hot.
