Ingredients

  • 2 large eggplants
  • 1 teaspoon salt
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice the eggplants and sprinkle with salt. Let them sit for 20 minutes to draw out moisture.
  3. Rinse and pat dry the eggplant slices.
  4. In a skillet, heat olive oil over medium heat and lightly fry the eggplant slices until golden brown.
  5. In a baking dish, layer marinara sauce, eggplant slices, mozzarella, and Parmesan cheese. Repeat layers.
  6. Sprinkle with oregano and black pepper on top.
  7. Bake for 30-35 minutes until cheese is bubbly and golden.
  8. Let it cool for a few minutes before serving.
