1 cup crushed graham crackers
1/2 cup unsalted butter, melted
2 cups cream cheese, softened
1 cup granulated sugar
3 large eggs
1 tablespoon vanilla extract
1/2 cup brewed espresso, cooled
1 tablespoon all-purpose flour
1/4 cup sour cream
Instructions
Preheat the oven to 325°F (160°C).
In a mixing bowl, combine the crushed graham crackers and melted butter. Press the mixture into the bottom of a springform pan to form the crust.
In another bowl, blend the cream cheese and sugar together until smooth.
Add the eggs one by one, mixing well after each addition. Incorporate the vanilla extract and cooled espresso.
Mix in the flour and sour cream until the mixture is creamy and well combined.
Pour the cheesecake mixture over the crust in the springform pan.
Bake for 50-60 minutes or until the center is set. Remove from the oven and let it cool.
