Ingredients

  • 2 cups fresh raspberries
  • 1 cup sugar
  • 1 cup heavy cream
  • 1 cup mascarpone cheese
  • 1 teaspoon vanilla extract
  • 8 oz ladyfingers
  • 1/2 cup almond flour

Instructions

  1. In a blender, puree raspberries and strain to remove seeds.
  2. In a large bowl, whip heavy cream until soft peaks form.
  3. Fold in mascarpone cheese, sugar, and vanilla until smooth.
  4. Layer ladyfingers in a cake pan, then spread raspberry puree over them.
  5. Add a layer of the mascarpone mixture and repeat the layers.
  6. Freeze the cake for at least 4 hours.
  7. Let it sit at room temperature for 15 minutes before slicing.
