  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, pitted and sliced
  • 2 cups spinach or mixed greens
  • 2 tablespoons balsamic vinaigrette

Instructions

  1. In a bowl, mix olive oil, oregano, garlic powder, and onion powder to create a marinade.
  2. Coat chicken breasts with the marinade and let sit for at least 30 minutes.
  3. Grill or pan-sear the chicken over medium heat until fully cooked, about 6-7 minutes per side.
