  • 1 pound boneless, skinless chicken thighs
  • 6 cups chicken broth
  • 1 cup orzo pasta
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 eggs
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine chicken, broth, carrots, celery, onion, and garlic. Bring to a boil.
  2. Reduce heat and simmer until chicken is cooked through, about 20 minutes.
  3. Remove chicken, shred it, and return to the pot.
