Ingredients

  • 8 cups chicken broth
  • 1 pound cooked chicken, shredded
  • 1 cup rice
  • 2 lemons, juiced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery; cook until softened.
  2. Add garlic and cook for another minute.
  3. Pour in chicken broth and bring to a boil.
  4. Add rice and cook until tender.
