A refreshing and easy-to-make Grilled Zucchini Chickpea Salad topped with creamy burrata and a drizzle of spicy chili oil.

Ingredients

  • 2 medium zucchinis
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 ball of burrata cheese
  • 2 tablespoons chili oil
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat the grill to medium-high heat.
  2. Slice the zucchinis lengthwise and brush with olive oil, salt, and pepper.
  3. Grill the zucchinis for 3-4 minutes on each side until charred and tender.
  4. In a bowl, combine chickpeas, minced garlic, and chopped parsley.
  5. Chop the grilled zucchinis and add to the bowl with chickpeas.
  6. Gently tear the burrata and place it on top of the salad.
  7. Drizzle with chili oil before serving.

Notes

  • For added flavor, marinate the chickpeas in lemon juice for 30 minutes before adding them to the salad.
  • Adjust the amount of chili oil based on your spice preference.
