- 2 medium zucchinis
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 ball of burrata cheese
- 2 tablespoons chili oil
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
- Preheat the grill to medium-high heat.
- Slice the zucchinis lengthwise and brush with olive oil, salt, and pepper.
- Grill the zucchinis for 3-4 minutes on each side until charred and tender.
- In a bowl, combine chickpeas, minced garlic, and chopped parsley.
- Chop the grilled zucchinis and add to the bowl with chickpeas.
- Gently tear the burrata and place it on top of the salad.
- Drizzle with chili oil before serving.
Notes
- For added flavor, marinate the chickpeas in lemon juice for 30 minutes before adding them to the salad.
