Ingredients

  • 2 cups vegetable broth
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add garlic, onion, carrots, and celery, sauté until soft.
  3. Add diced chicken and cook until no longer pink.
  4. Stir in broth, thyme, salt, and pepper.
