A creamy and healthy zucchini soup that is the perfect light meal or appetizer.

Ingredients

  • 4 cups zucchini, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sauté until translucent.
  2. Add the zucchini and cook for another 5 minutes.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.
  4. Blend the soup until smooth, then stir in the coconut milk.
  5. Season with salt, black pepper, and thyme. Serve warm.

Notes

  • For a thicker consistency, blend less.
  • Garnish with fresh herbs if desired.
