- 4 cups zucchini, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sauté until translucent.
