A delicious and hearty potato soup infused with cheddar, garlic, and herbs, complemented by the smoky flavor of turkey bacon.

Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 cup turkey bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup cheddar cheese, grated
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and set aside.
  2. In the same pot, sauté onions and garlic until fragrant.
  3. Add diced potatoes and chicken broth. Bring to a boil, then simmer until potatoes are tender.
  4. Blend the soup until smooth, then return to heat.
  5. Stir in heavy cream and cheese until melted.
  6. Season with thyme, parsley, salt, and pepper.
  7. Top with crispy turkey bacon before serving.

Notes

  • For a chunkier texture, reserve some potato dices to add back into the soup after blending.
