  • 4 cups cooked rice
  • 1 pound boneless, skinless chicken breast
  • 1 cup honey BBQ sauce
  • 1 cup corn, canned or frozen
  • 1 cup black beans, canned, rinsed and drained
  • 1 bell pepper, diced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat and add diced bell pepper.
  3. Cook bell pepper until softened, about 3-5 minutes.
  4. Season chicken breast with salt and pepper, then place in a baking dish.
  5. Pour honey BBQ sauce over the chicken and bake for 25-30 minutes until cooked through.
  6. Once cooked, shred the chicken and mix with the remaining BBQ sauce.
  7. In bowls, layer rice, black beans, corn, and BBQ chicken.
  8. Serve immediately, garnished with extra BBQ sauce if desired.
