A creamy and delicious cauliflower soup made easy in the Instant Pot with turkey bacon.

Ingredients

  • 1 head cauliflower, chopped
  • 4 slices turkey bacon, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika

Instructions

  1. Set the Instant Pot to sauté and cook the turkey bacon until crispy.
  2. Add the onion and garlic, cooking until softened.
  3. Stir in the cauliflower, vegetable broth, salt, pepper, and paprika.
  4. Close the lid and set to high pressure for 10 minutes.
  5. Once done, quick release the pressure. Blend the soup until smooth.
  6. Stir in the milk and heat through before serving.

Notes

  • For a thicker soup, reduce the amount of broth.
  • Top with croutons or extra bacon for added crunch.
