  • 1 ½ cups graham cracker crumbs
  • ½ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • ¼ cup cornstarch
  • ½ teaspoon salt
  • 1 ½ cups water
  • 4 large egg yolks
  • 1 tablespoon lemon zest
  • ¾ cup fresh lemon juice
  • 4 large egg whites
  • ½ teaspoon cream of tartar
  • ½ cup granulated sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, ½ cup sugar, and melted butter. Press into the bottom of a baking dish.
  3. In a saucepan, whisk together 1 cup sugar, cornstarch, and salt. Gradually stir in water.
  4. Cook over medium heat until thickened. Stir in egg yolks, zest, and lemon juice. Pour over the crust.
  5. In a bowl, beat egg whites with cream of tartar until soft peaks form. Gradually add ½ cup sugar until stiff peaks form.
  6. Spread meringue over the lemon filling.
  7. Bake for 10-12 minutes until meringue is golden brown.
  8. Allow to cool before cutting into bars.
