- ½ cup granulated sugar
- ½ cup unsalted butter, melted
- 1 cup granulated sugar
- ¼ cup cornstarch
- ½ teaspoon salt
- 1 ½ cups water
- 4 large egg yolks
- 1 tablespoon lemon zest
- ¾ cup fresh lemon juice
- 4 large egg whites
- ½ teaspoon cream of tartar
- ½ cup granulated sugar
- Preheat the oven to 350°F (175°C).
- In a bowl, combine graham cracker crumbs, ½ cup sugar, and melted butter. Press into the bottom of a baking dish.
- In a saucepan, whisk together 1 cup sugar, cornstarch, and salt. Gradually stir in water.
- Cook over medium heat until thickened. Stir in egg yolks, zest, and lemon juice. Pour over the crust.
- In a bowl, beat egg whites with cream of tartar until soft peaks form. Gradually add ½ cup sugar until stiff peaks form.
- Spread meringue over the lemon filling.
- Bake for 10-12 minutes until meringue is golden brown.
